Pumpkin Spice Pancakes

Combine: 1 cup of milk 1 tbspn of apple cider vinegar

STEP ONE

Add: 2 eggs, lightly beaten 1 tsp vanilla extract 1 tbspn melted butter 1 tbspn maple syrup ½ Cup Pure Pumpkin Puree

STEP TWO

IN ANOTHER BOWL COMBINE: 1 cup all-purpose flour 2 tbspn cornstarch 2 tsp baking powder 1 tsp ground cinnamon ¼ tsp of ground allspice ¼ tsp kosher salt

STEP THREE

Use a whisk and fold ingredients together by hand. Fold 3-4 times, without over mixing the batter.

STEP FOUR

Make a well in the dry ingredients then pour in your liquid ingredients.

STEP FIVE

Warm up a flat skillet on medium-high heat with butter. Turn down the heat to a lower setting once the pan heats up.

STEP SIX

Once ready, pour 1/4 cup of the batter into the pan in round circles. Cook each pancake 3-4 minutes on each side.

STEP SEVEN

Serve pumpkin spice pancakes warm with nuts, nut butter, syrup, or your choice of toppings.
