easy Roasted tomato soup recipe

Place in a bowl:  4-5 Ripe tomatoes, seeded and quartered  1 Small onion, quartered  4 Whole garlic cloves

STEP ONE

Toss with olive oil, kosher salt and pepper to taste. 

STEP TWO

Place ingredients onto a baking sheet lined with parchment paper and bake on 400 degrees F for 45 minutes.

STEP THREE

Meanwhile, place a large soup pot on the stove over medium-low heat and add:  2 tablespoons of tomato paste  2 cups of vegetable broth

STEP FOUR

Once the tomatoes are done roasted, carefully add them to the pot and bring ingredients to a simmer for 15-20 minutes.

STEP FIVE

Carefully use an immersion blender or regular blender to blend down the ingredients to a soup texture. Then return to the pot if removed for blending.

STEP SIX

Simmer another 15-20 minutes then serve with a grilled cheese. Add a little cream to each individual bowl if desired.
